The ultimate comfort food, these Apple Cinnamon Scrolls are sweet, soft, and totally addictive – not to mention they'll make your kitchen smell divine. Drizzled in an icing sugar glaze, they're made from melt-in-your-mouth homemade pastry and filled with a perfectly spiced apple mix.
In her pastry recipe, Healthy Luxe has also included our Raw Protein Paleo Fermented in Vanilla Lucuma flavour. Unlike other whey-based proteins that might leave you feeling bloated or uncomfortable, our Paleo Protein is specifically designed to be gentle on the digestive system. It contains organic sprouted and fermented protein that’s easily digested, absorbed, and used by the body to support lean muscle growth. Vegan and grain-free, each serve delivers up to 50% RDI Iron and includes cultured superfoods including Sacha Inchi, spirulina, spinach, quinoa, seeds and more.
Once your dough has risen, it’s time to make the apple filling! For this, you’ll need 4 apples cut into small pieces. This mix is naturally sweetened with coconut sugar and spiced up with ginger and cinnamon. Bake for 30 minutes until golden brown, then set aside and top with walnuts and your icing sugar glaze. We recommend digging in while they're nice and warm!

Combine flour, protein, yeast, and sugar in a bowl, mix well.
In a separate bowl, combine butter, oat milk, egg, and vanilla, whisk together.
Make a well in dry mix and gradually add the wet mixture, stirring until it forms a dough-
like texture.
Knead for a few minutes and place in a large bowl. Cover with a damp tea towel and leave for approximately 1 hour. The dough will increase in size (it should almost double).
Meanwhile, prepare the apple mix. Combine all ingredients in a heavy based pan and
cook over a low heat for approximately 10 minutes, or until apples are soft.
Set aside until cooled.
Place dough between to sheets of baking paper and roll into a rectangular shape (approx. 1/2 cm thick).
Remove top baking sheet and generously spread with apple mix. Gently roll (lengthwise),
discarding paper underneath.
Using a sharp knife, cut into approximately 14 pieces.
Arrange in a greased and lined oven proof dish, leaving space between (approx. 1
cm). Cover and set aside for approximately 45 minutes.
Pre heat oven to 180 degrees C.
Bake scrolls for 30 minutes, or until golden.
Cover and set aside for a further 10 minutes to cool slightly.
Top with walnuts and icing sugar glaze (optional). Best enjoyed warm.
